CBD Chocolate Drizzle Almond Butter Cookies with Veggimins

Sep. 25, 2018Coffee, cookies, beauty products, candy… these days you can find CBD oil in just about any and everything — including your favorite latte at your local cafe. This recent flood of CBD products is a far cry from just a couple of years ago, when the mere mention of CBD oil garnered sideways glances and muttered references to that other compound it’s often confused with.

But CBD is different (read: completely non-hallucinogenic and from a different variety of plant — check out this article for more info on the differences between hemp and marijuana) and finally experiencing the attention it so rightly deserves for its potential to support everything from anxiety to depression to muscle aches and pains. In short, CBD oil tends to have a more beneficial effect on the physical body, while THC tends towards mental alteration.

If you’re unfamiliar with CBD oil and what it does, we suggest popping over to this post, which answers the (new) age-old question: what does CBD oil do? Go ahead and read it, we’ll be right here waiting for you…

Great. CBD sounds pretty amazing, right? One glance at the benefits and it’s easy to see why so many people sing its praises, and with its legalization in all 50 states, one would think everyone and their grandma was on the CBD bandwagon. But the truth is, CBD is still difficult to source. Why? Because while CBD oil may be legal, actually growing hemp isn’t. As a result, demand has skyrocketed while supplies remain relatively low, which has, unfortunately, opened the doors for low-quality imports.

How to find quality CBD products

So how do you find high-quality CBD products? It all comes down to educating yourself. Similar to ensuring you’re purchasing the highest-quality olive oil or coconut oil you can, your CBD oil should be the best of the best — otherwise you’re shelling out a whole lot of money for a product that doesn’t deliver, or worse, contains additives or contaminants.

Take the CBD products from superfoods brand Veggimins for example. Veggimins’ CBD products are organically-grown, non-GMO, and sourced in the US where they’re grown and processed in Colorado. By extracting their CBD without the use of solvents or chemicals (they use a supercritical CO2 process), Veggimins third-party lab-tested products are guaranteed to be free of contaminants and the best possible quality.

Not only are Veggimins-brand CBD products highly effective, they’re also delicious, thanks to the addition of another superfood in many of their products: raw chocolate. That’s right. But the addition of raw chocolate isn’t just for taste, the compounds found in cacao, specifically theobromine, could support circulation and the body’s ability to put the CBD to work. It’s a one-two punch of taste and function, making it possibly the most delicious way of reaping the rewards of CBD.

One of our favorite Veggimins products? It’s hard to choose among the selection (you could call it a broad spectrum of CBD products…) but the probiotic-enhanced CBD Chocolate Butter takes the cake. Creamy, chocolatey, with a hint of hazelnut, it really doesn’t get much better… unless of course you spread it on a cookie. Want to really chill out? Make the recipe below the next time you’re craving a cozy night in. With slightly crispy edges and a soft center, these simple almond butter cookies come together in no time and are only enhanced with the addition of a chocolate CBD drizzle.

CBD Chocolate Drizzle Almond Butter Cookies

Adapted from paleohacks

Makes about 20-24

1 cup unsweetened almond butter

1 egg

½ tsp vanilla extract

½ cup coconut sugar

½ tsp cinnamon

⅛ tsp sea salt

Veggimins CBD Chocolate Butter

How to:

Step 1

Preheat your oven to 350℉ and line a baking sheet with parchment paper.

Step 2

In the bowl of your stand mixer, combine the almond butter, egg and vanilla extract until well combined. Add the coconut sugar, cinnamon and sea salt and stir to combine.

Step 3

Use a spoon to scoop out about 1 heaping teaspoon of dough at a time, rolling each spoonful between palms to make 1-inch balls. Place each dough ball on the baking sheet and use a fork to gently flatten the balls.

Step 4

Bake for 8-10 minutes, or until lightly browned. Remove cookies from oven and allow to cool.

Step 5

Once cool, use a spoon to drizzle cookies with Veggimins Chocolate Butter. Place in the freezer to set. Enjoy! Store in the fridge for up to 1 week.
